Fudgy Brownies

Four minutes beating the eggs, timed

The thin shiny crust on a brownie is not an ingredient, it is four minutes with a timer. Aunt Marcy beat the eggs and the sugar until the mixture held a ribbon, and that is where it comes from. Nine ingredients, six steps, twenty-five minutes at 350 whatever the middle looks like, and a full hour in the tin before the knife goes anywhere near them.

The ingredients

  • 8 oz dark chocolate
  • 1 cup butter
  • 1 1/2 cups granulated sugar
  • 4 eggs
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp espresso powder
  • 2 tsp vanilla extract

How to make it

  1. Melt the dark chocolate and the butter together over a pan of water, then take it off before it is fully smooth.
  2. Beat the eggs with the sugar for four full minutes, until the mixture holds a ribbon on the surface.
  3. Fold the warm chocolate and the vanilla extract into the eggs in three goes, from the bottom, without stirring it flat.
  4. Sift in the flour, the cocoa and the espresso powder with a good pinch of salt, and stop folding as soon as the streaks are gone.
  5. Bake at 350 °F for twenty-five minutes, no more, however wet the middle looks.
  6. Let them sit a full hour in the tin before cutting, or you get chocolate soup and a ruined knife.

What makes the difference. Four minutes beating the eggs and the sugar, timed. That is where the thin shiny crust on top comes from, and nothing else makes it.
